It is committed to classical techniques and methods but offers a fresh and modern approach.
Practical A good book but feel it is still a bit out of date, in that there are no calculations for fan-ovens. I know that the temperature is usually reduced by 20C, but the cook time is also reduced. Most cookery books tend to miss out this fact and cooking time is a bit of trial and error. Fan ovens are much more efficient, saving time and energy. I have to switch off the fan for some recipes, such as cakes, for arguments sake which tend to dry out. It would be nice to have some mention of this as you would not know where you went wrong and why.There are a few pictures in the book but the paper is quite thin and the print quality is bad, out of focus, and have look as though they were taken from a womans weekly mag in the 70's. They all have a bit of an orange fuzzy look about them which cheapens the book overall. Oddly enough, the Vegetable bible was the same. If you are not interested in pictures and there aren't that many, then the book is a practical help in the kitchen with some everyday useful recipes The All in One Cookery Book

Leith's Cookery Bible Reviewed in the United States on March 14, 2007 This book gives lots of information concerning food and the handling and cooking of food. It has lots of good recipes and is one of my favorite cook books.
